Liz’s Banana Bread

Subject: Banana Bread

3 mashed bananas
1/2 cup shortening melted
1 cup sugar
1 1/2 cups flower
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
3/4 cups chopped walnuts (I use chocolate chips)
1 egg (add last)

Mix all of the above together and pour into greased pan. Bake at 350F for 50-60 minutes.

Before I put it in the oven I put chocolate chips on top of the loaf and sprinkle sugar on top as well.

Crème brûlée

8 egg yolks
1/3 cup granulated white sugar
2 cups heavy cream
1 teaspoon pure vanilla extract
1/4 cup granulated white sugar (for the caramelized tops)

Preheat oven to 300ºF. In a large bowl, whisk together egg yolks and sugar until the sugar has dissolved and the mixture is thick and pale yellow. Add cream and vanilla, and continue to whisk until well blended. Strain into a large bowl, skimming off any foam or bubbles.

Divide mixture among 6 ramekins or custard cups. Place ramekins in a water bath (large pan filled with 1 or 2 inches of hot water) and bake until set around the edges, but still loose in the center, about 50 to 60 minutes. Remove from oven and leave in the water bath until cooled. Remove cups from water bath and chill for at least 2 hours, or up to 2 days.

When ready to serve, sprinkle about 2 teaspoons of sugar over each custard.

For best results, use a small, hand-held torch to melt sugar. If you don’t have a torch, place under the broiler until sugar melts. Re-chill custards for a few minutes before serving.

Serves 6

Memories of Misty Mountain Peach Cobbler Cake

2 1/4 cups flour

3/4 cup white sugar

3/4 cup butter/margarine

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 egg, beaten

3/4 cup sour milk (add 2 tablespoons vinegar to regular milk)

fresh peaches (approx. 10 regular size)

Peel peaches, cut into small pieces, sprinkle with white sugar and set aside.  Combine flour and sugar in large bowl.  Cut in butter until mixture is crumbly (Use a pastry cutter or two knives). Set aside 3/4 cup of this mixture for topping.  To the remainder, add the baking soda and baking powder.  Combine the beaten egg and sour milk.  Add to the dry mixture.  Stir until well moistened. Spread 2/3 of this batter over the bottom and part way up the sides of a greased 9″ (23 cm) springform pan.  Spoon the peaches over the batter.  Drop spoonfuls of the remaining batter over the peaches.  Sprinkle with the reserved crumb mixture.  Bake @ 350 degrees for one hour.

Glazed Lemon Zucchini Bread

Ingredients
  • 2 cups cake flour
  • ½ tsp. salt
  • 2 tsp. baking powder
  • 2 eggs
  • ½ cup canola oil
  • 1? cups sugar
  • 2 TB lemon juice
  • ½ cup buttermilk
  • zest of 1 lemon
  • 1 cup grated zucchini
Glaze ingredients:
  • 1 cup powdered sugar
  • 2 TB lemon juice
  • 1 TB milk
Instructions
  1. Mix flour, salt and baking powder in a medium bowl and set aside.
  2. In a large bowl, beat eggs. Then add oil and sugar until well blended. Add lemon juice, buttermilk, lemon zest to this mixture and blend all together.
  3. Fold in zucchini until it is mixed well.
  4. Add dry mixture to the wet mixture and blend all together until well combined.
  5. Pour batter into greased 9×5 loaf pan.
  6. Bake at 350 for 40-45 minutes.
  7. While still warm, make glaze and spoon over the bread. Let the glaze set up before cutting and serving.

NOTES FOR GLAZED LEMON ZUCCHINI BREAD:

  • Use a cheese grater to grate the zucchini.
  • Be sure to dry the zucchini after it has been grated so it is NOT super water-y.
  • You can also use all-purpose flour instead of cake flour, but we prefer cake flour.
  • If using a glass pan, you may need to cook 15-25 minutes longer.
  • Bottled lemon juice works just as well as juice directly from the lemon.
  • Can also be made in smaller loaf pans. You can divide batter into 4 and place in greased 6 x 2 1/2? pans (Bake for 35-40 minutes)
  • Can also be made as muffins – Bake for 25-30 minutes – makes about 15-16 muffins.
  • For high altitude bake at 375 for 55 minutes.

Sarah’s Lime Glazed Cookies

me Glazed Cookies (Corinne)

 Makes about 3 dozen.
For the Cookie:
1 1/2 sticks (3/4 cup) unsalted butter at room temperature
1/4 cup granulated sugar
1/4 cup icing sugar
2 tablespoons finely grated lime zest (2 medium limes) (use regular limes – not Key Limes – their flavour is too mild)
2 tablespoons freshly squeezed lime juice
1/4 teaspoon salt
1 1/2 cups all-purpose flour
Beat the butter and both sugars until light and fluffy, 3 to 4 minutes.  Add lime zest, juice and salt and beat until combined. Add flour and beat until just combined.  Turn out dough onto a large piece of parchment paper. Using your hands, shape dough into an 8″ log; flatten into a rectangle (1-1/2 inches high and 2-1/2 inches wide). Fold paper over log; flatten sides against work surface.  Freeze or refrigerate until firm, at least 1 hour or overnight.
(Note: when I made these for Gabriela’s baby shower I divided the dough into two flat discs.  After being almost frozen, I rolled each disc between sheets of parchment paper to about a 1/4 inch thickness.  I used a scalloped edge cookie cutter and they ended up looking very pretty, very lightly sprinkled with coloured sugar.  I found neat ones at Homesense, and particularly liked using a blue/green sugar combination.)
Preheat the oven to 350F, with racks in the upper and lower thirds. Line two large baking sheets with parchment paper. Using a sharp knife, cut dough into 1/4-inch-thick slices.  Place cookies about 2 inches apart and bake, rotating sheets halfway through, until cookies are puffed and barely golden, about 15 minutes.  Transfer to a wire rack to cool.  Spread about one teaspoon Lime Glaze on each cookie.  Unglazed cookies can be kept in an airtight container at room temperature for up to 4 days; but glazed cookies should be eaten the same day (well, that’s not always going to happen and have found storing them, once cold, between sheets of parchment paper, works okay for iced ones – just remove them to a plate before letting them warm up again).
For the Lime Glaze:
3/4 cup confectioners’ sugar
1 tablespoon plus 2 teaspoons freshly squeezed lime juice
1 teaspoon finely grated lime zest
In a small bowl, whisk together all ingredients until spreadable. Use immediately.

Brownies

10 tblsp unsalted butter(just under 2/3 of a cup)
1 1/4 cups granulated sugar
3/4 cups plus 2 tblsp unsweetened cocoa
1/4 teas salt
1 teas vanilla
2 large eggs, cold
1/2 cup all-purpose flour
2/3 cup chopped nuts if desired
1.  Preheat oven with lower third rack at 325.
2.  Line 8 x 8 inch square baking dish with parchment paper.
3.  In a double boiler combine butter, sugar, cocoa and salt.  Mix occasionally until the butter has melted.  Set aside for 3 to 5 minutes to cool.
4.  Stir in vanilla and then add eggs one at a time, stirring vigorously after each one.
5.  Add the flour until fully incorporated and then stir for 40 to 50 strokes.  Add nuts if desired.
6.  Spread into pan and bake 20 to 25 minutes or until toothpick comes clean.  Cool completely then remove from pan.

Chocolate Buttercream Icing

1/2 cup butter
1 1/2 cups icing sugar
2 tblsp milk
2 tblsp sifted cocoa powder
Beat the butter and milk in electric mixer until the colour turns white and the texture is creamy.  Gradually add the icing sugar and once all incorporated add the cocoa powder and mix again.  Once it is spreadable it is ready.

Carrot Cake

Cake
Mix together 1 cup white sugar
With 1 cup oil

Add 3 eggs and Whip
1/2 tsp salt
1 1/3 tsp of baking powder
1 1/3 tsp baking soda
1 1/3 tsp cinnamon
1 1/3 cup of flour

After all of the above ingredients have been mixed well, add 2 cup carrots (shredded) and 1 cup of walnuts.

Bake @ 300 F for 1 hour.

Icing

1 – 8oz pkg of philadelphia cream cheese
2 cups of icing sugar
1/4 cup of melted butter
1/2 tsp vanilla
Beat well, and chill before putting on cake.

Pumpkin Cheesecake

Filling:
4 eggs separated
1 lb cream cheese
1 cup light cream
1 cup pureed pumpkin
3/4 sugar
3 tablespoons flour
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg

Beat egg yolks until thick and lemon coloured

In another bowl whip cream cheese until light and fluff. Stir in cream, pumpkin, sugar, egg yolk, flour, vanilla & spices.

Beat egg whites until stiff & fold into pumpkin mixture.

Crust:
1 3/4 cups of graham crumbs
1/4 cup sugar
1/2 cup melted butter

Pour pumpkin mixture into rust and bake @ 350 degrees fahrenheit for 1 hour.

Topping:
Combine –
1 cup sour cream
3 tablespoons of brown sugar
1/2 teaspoon of vanilla
Spread on top of cheescake and bake @ 450 degrees for 5 minutes
